Notes: This matcha is about of a subtle balance of a umami flavor and a touch of astringency with a silky and smooth texture, bright notes of white peach with its refined bittersweet sensations on the tongue, a sweet long aftertaste. It has a beautiful forest-green color and it is delicious on its own but also goes well with a slightly sweet confections.
Usucha (thin tea) Recipe :
2 g matcha
60 g soft natural water @80C (no RO pls)
Koicha(thick tea) Recipe :
4 g matcha
30 g soft natural water @80C (no RO pls)
1step: sift matcha into a matcha bowl
2step: add around 10 g water, mix with a bamboo whisk into a thick paste
3step: add the rest of the water, whisking for 15s "W" shape vigorously till frothy for Usucha or "back and forth" slowly for Koicha
