In a heated up gaiwan it opens up with the aroma of roasted walnut and oat cookies provided by roast but very soon it turns into sweet heavy cream with much fresher green oolong like character and lots of floral notes to it. Brewed in the clay it has extra direction of bitter chocolate and butter cookies.
In a cup it has simmilarity with Oolong #03 but there are much more boldness and richness in both taste and flavour which opens up as tons of heavy cream, caramel, honeysuckle but also some savoury notes into it as raw walnut and at the same time roasted walnut. Finish is long with dancing candied orange peel sweetness and dancing tanginess on the tongue.
In many cases you can find simmilar tea labeled as Dong Ding Oolong or Frozen Summit Oolong which is a very popular tea in Taiwan. But an authentic Dong Ding Oolong only comes from Dong Ding Mountain near a village called Lugu (鹿谷) in Nantou County, Taiwan.There are also many who claims that the identity of the Dong Ding a an unique roasting method, but actually the same labeled product can be deep roasted what will deliver cup with more nuttier and chocolaty flavour profile or light roasted what will provide more clear and refreshing flavour.
